Carrot Noodles with Peanut Sauce


• 1/2 cup peanut butter

• 1/4 cup water

• 2 tbsp soy sauce

• 2 tbsp rice vinegar

• 2 tbsp agave nectar

• 2 cloves garlic, minced

• 2 medium carrots, spiralized

• 1 cup chopped bell pepper

• 1 cup chopped onion

• 2 cups chopped broccoli

• 1 cup chopped cherry tomatoes

• Salt and pepper to taste


• In a small bowl, whisk together the peanut butter, water, soy sauce, rice vinegar, agave nectar, and minced garlic. Set aside.

• In a large pan, heat a small amount of water over medium heat. Add the spiralized carrots, bell pepper, onion, and broccoli. Cook for 5 minutes.

• Add the cherry tomatoes and peanut sauce to the pan and stir to combine.

• Season with salt and pepper to taste.
