Ingredients:
• 1 cup diced onion
• 1 cup diced carrot
• 1 cup diced celery
• 1 cup diced tomato
• 1 cup chickpeas, drained and rinsed
• 4 cups vegetable broth
• 2 cups kale, chopped
• 1 tsp garlic powder
• 1 tsp dried oregano
• 1 tsp dried basil
• 1/2 tsp black pepper
Instructions:
• In a large pot, heat a small amount of water over medium heat. Add the onion, carrot, and celery and cook until they are tender, about 5 minutes.
• Add the tomato, chickpeas, vegetable broth, kale, garlic powder, oregano, basil, and black pepper to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
• Serve hot.
