Vegan Black Bean Tacos

Ingredients:

• Vegan Black Bean Tacos:

• 1 cup cooked black beans

• 2 cups chopped lettuce

• 1 cup diced tomatoes

• 1 cup diced onions

• 1 cup diced bell peppers

• 1/2 cup diced avocado

• 1/4 cup chopped cilantro

• 8 corn tortillas

For the taco seasoning:

• 1 tsp chili powder

• 1 tsp ground cumin

• 1 tsp paprika

• 1/4 tsp garlic powder

• 1/4 tsp onion powder

• 1/4 tsp salt

Instructions:

• In a small bowl, mix together the taco seasoning ingredients.

• In a large pan, heat the black beans over medium heat until heated through.

• Add the taco seasoning to the black beans and stir to coat.

• Warm the corn tortillas in a separate pan over medium heat.

• Assemble the tacos by adding the black bean mixture, lettuce, tomatoes, onions, bell peppers, avocado, and cilantro to each tortilla.

• Serve and enjoy!
